Greens: Handful of coriander and mint leaves
Ghee: 4 tsp

👩🍳 Step-by-Step Method Follow these exact steps in this order to make your biryani perfectly:
Step 1: Marinate for 1 hourClean your 3kg mutton and place it directly into your large biryani cooking pot.Add 5 tsp ginger garlic paste, 1kg curd, onion birista, 3 tsp salt, and 1 tsp turmeric powder.Add 1 cup green chilli paste, 1 tsp garam masala, and the whole spices (10 cloves, 1tsp black cumin, 10 cardamom, 5 cinnamon).Add 2 tsp mutton masala, 2 tsp tasting powder, 4 tsp red chilli powder, and 1 tsp Kashmiri red chilli powder.Add the handful of coriander and mint leaves, 4 tsp ghee, and 1 cup milk malai or fresh cream.Pour in your saffron milk and the tempering tadka with onion infused oil.Mix everything together thoroughly with your hands so the meat is fully coated.Cover the pot and marinate for 1 hour at room temperature.
Step 2: Cook rice for 60-70%Wash your 3kg basmati rice and soak it in water for 30 minutes, then drain it.Boil a large pot of water with a 4 spoon salt.Add the soaked rice to the boiling water.Cook rice for 60-70% only. The grain should break into pieces but still be hard inside.
Step 3: Once cookedOnce cooked, strain the hot rice out of the water immediately.Put the strained rice directly on top of your raw marinated mutton layer. Spread it out evenly.
Step 4: Food colour optionalSprinkle your food colour (optional) over the top of the rice layer.
Step 5: 4 tsp gheeDrizzle the final 4 tsp ghee evenly over the very top.Seal the pot tightly with a lid (use dough or foil to trap the steam).cook on very low heat and cook for 45 minutes on Dum. Turn off the heat and let it rest for 15 minutes before opening.
