Slow-Cooked Thick Gravy Paya Recipe 🍲
Ingredients
• 1 dozen cleaned paya
• 3 medium onions, sliced
• A handful of green chillies
• 2 tbsp ginger-garlic paste
• 1 tsp turmeric powder
• 2 tsp red chilli powder
• Oil (5–6 mini cups, as shown in the video)
• 2 glasses of water
• 1 tsp ghee
• 2 tsp garam masala
•Paya masala
• Fresh coriander leaves
• Fresh mint leaves
Method
Step 1: add Cleaned Paya (Trotters) and sliced onions into pressure cooker
Step 2: Add the ginger-garlic paste .
Step 3: Add the green chillies, turmeric powder, and red chilli powder. Mix well.
Step 4: Add the cleaned paya and cook for a few minutes until well coated with the masala.
Step 5: Pour in 2 glasses of water, close the pressure cooker, and cook for 5 whistles.
Step 6: Once the pressure releases naturally, open the cooker, check the paya, and mix everything well.
Step 7: Close the cooker again and cook for 5 more whistles until the paya becomes soft and tender.
Step 8: After the whistles are done, do not keep the flame on high.
Add 1 more glass of water,
1 tsp ghee, and
2 tsp garam masala.
Step 9: Add fresh coriander leaves and mint leaves.
Let the paya slow cook on low flame until the gravy becomes thick and rich.
Step 10: Serve hot with naan, roti, or rice.
